Homemade Air Fryer Paleo Calzones

This quarantine sure has given everyone a ton of time to experiment and try new things. And after eating the same things over and over and over I decided to try something new with my favorite Chebe Mixes. I created a paleo calzone that’s PACKED full of flavor and is insanely filling.

Starting with the Focaccia Mix, I followed the boxed instructions and created two pizza rounds (Chebe also has a pizza mix but I decided to try the Focaccia mix incase it’d make the calzone a little fluffier!)

Obviously they’re not very round but oh well 😉

I stuffed that sucker FULL and once completed I carefully folded the dough in half and tightly pressed down to release any extra air trapped inside to avoid bubbles and a sauce explosion 😉

After pinching the edges to keep all those goodies in I cranked up my airfryer to 350* and cooked for only 6 minutes.. Yeah.. 6 MINUTES y’all. It came out crunchy on the outside and gooey on the inside.
It ain’t pretty but man it’s good!

Because we eat paleo we don’t add cheese but never felt like it was lacking because of the gooey-ness of the dough!

Not sure how to do this timing wise in an actual oven but we’ve been using our air fryer WAY more than anything else so we’ve found that this is a quick and delicious way to prepare a healthy meal when the pizza cravings hit!

Paleo Chicken Noodle Soup

My Hubby and I are mega sick with something.. Our coughing has been so bad it’s nearly impossible to sleep at night. So I ran to the grocery store today to grab some ingredients to make some homemade paleo chicken noodle soup..

And well, it turned out INCREDIBLE and has already helped the inflammation in our throats. Try it out if you’re looking for a healthy alternative to a classic cold remedy!

Air Fried Paleo Wings

Y’all – Just got my new air fryer for Christmas and it’s AMAZING. You can throw nearly anything in there and cook it health-ily in half the time! Our first experiment was with chicken wings and OMG they were the best tasting wings I’ve ever had.. (Not to toot my own horn 😉 )

We bought the Cooks 2.5L Air Fryer from JCPenney for $49.99 and it works fantastic!

I wish I could add more photos and details to this post but it’s literally just that easy that it only takes a few paragraphs! We made two batches: Half BBQ and half buffalo. In each bowl we threw our wings in that we had bought from Sprouts then seasoned them with salt, pepper and cajun seasoning then topped them with paleo-friendly sauces!

I set our air fryer to 360°F, placed the wings in the basket evenly and cooked them for 15 minutes. It could fit about 7-8 wings and we had 15 so it worked out perfect for each batch. We removed them from the basket and they were cooked completely through! The skin was incredibly crispy and flavorful (Without the need of deep frying!)

We’re officially hooked and already trying to figure out what ELSE we could make with it! We are running back to the store today to grab some more wings so we can make some for some friends coming over for the Cowboys Playoff game and I cannot wait for someone else to try them out!

Paleo Green Chili

It’s falllllllllllll! In excitement decided to reshare this amazing green chili recipe I created last year since the weather is cooling down ❥

Was recently asked what my favorite paleo meal is. I would say 100% it’s my homemade green chili and gluten-free rolls.. Try them for yourself!

Simplykaraliz’ Paleo Green Chili

  • 1 lbs of Shredded Pork or Any meat of your choice (Mine was leftovers from Crockpot Pork I made)
  • 7 Hatch Green Chilis
  • 2 1/2 cups Organic Chicken Stock
  • 2 Tbsp Coconut Oil
  • 1/2 Yellow Onion, diced
  • Juice from 1 lime
  • 4 tbsp Garlic Cloves, minced
  • 1/2 Cilantro, half bunch
  • 1 can of diced green chilies
  • Handful / Or 1 Full Jalapeño
  • 2 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tbsp Black Pepper
  • 1 tbsp Sea Salt
  1. In a large pot, melt your coconut oil and add your diced onions and minced garlic. Cook until your onions are brown.
  2. Add the cumin, paprika and black pepper to the mixture and combine.
  3. Add your chicken broth and meat, bring to a boil.
  4. Turn the heat to low and allow to simmer.
  5. Cut up your chilis and peppers (if applicable) and throw into pan. Cook them until blackened.
  6. Put chilis, jalapeños, juice from your lime and cilantro into the blender to desired consistency (I like mine smooth but a little bit chunky)
  7. Add your blend and your can of diced green chilis to the pot and allow to simmer for 1 hour.

(Anymore time will make it really dry, can add more broth at any point if needed)


Chebe Bread – Rolls

  • Chebe Focaccia Bread Mix
  • 2 Eggs
  • 2 tbsp Olive Oil
  • 4 tbsp Almond Milk

Follow directions on the box – However, if you want the rolls: Oil a muffin pan and place pieces of the batter in the bottom of each muffin tin and spread till it fills the bottom. And bake for 25 minutes at 375°F.

Football is Coming BACK!

Anyone else ECSTATIC that football is coming back?! WE ARE. We’re mega huge football fans in my house and always have large parties and delicious food.. But when you’re a healthy eater the options at stores are not very “friendly” at all.. So here are some delicious alternatives to some tailgating faves!

Our favorites are pork green chili sliders (with Birch Benders Paleo Pancake Mix made into buns), buffalo chicken (made with drumsticks and buffalo sauce), and bacon wrapped guacamole peppers! They’re all incredibly delicious – And SPICY. Which is of course necessary for football Sundays 😉

Paleo Jalapeño Poppers

  • Jalapeño Peppers (8-10)
  • 2 Large Avocados
    • Make into Guacamole
      • Mash both avocados
      • Add lemon juice (To taste / consistency)
      • Add Salt / Pepper / Cajun Seasoning <- Optional

Not an avocado person? I also LOVE to use Kite Hill Almond Cream Cheese

  • 1lbs Bacon

  1. Preheat oven to 400*F
  2. Wash and halve the peppers.
  3. Stuff Guacamole into pepper
  4. Cut bacon strips in half
  5. Wrap bacon around pepper
  6. Place in oven for around 20 minutes or until bacon is done.
  7. Remove and enjoy!

Birch Benders

As y’all already know – We’re big paleo eaters. It’s been amazing for our health but it can be a little challenging at times when cravings kick in. A big one in my family is waffles and pancakes. Hudson is obsessed with waffles and the kids always want pancakes on the weekends. However, I really hate using regular sugar and flour – So much bleach, gunk and chemicals, so I would take forever trying to make paleo pancakes and they’d only come out “okay”.

But when I stumbled across a Birch Benders’ Paleo Waffle/Pancake mix in Sprouts I was SO excited. “Only Add Water SO much easier than 20 minutes worth of trying to get the consistency and taste justtt right.

Well.. 2 years later and it is a staple in our home. That long being a customer and I happened to get an invite to an exclusive writer’s event thanks to Sprouts to Birch Bender’s Denver office!! I was literally giddy!

Once we got there we were greeted by the sweetest people ever – Their employees were so friendly, really passionate about their product and just happy with life (I would too if I worked for such a fun company!)

Now.. Something I hadn’t known (Not sure HOW) was that they had created some DELICIOUS new products – Frozen Waffles!! Even PALEO waffles which they had learned to make straight from master waffle makers in Belgium.. How amazing it that?! They were so dedicated to creating delicious and healthy waffles that they searched all over the world. That is a company I love to support!

Now I had a delicious, REALLY quick option for Hudson for breakfast since he’s obsessed with waffles! (And not just any kind… But specifically the frozen kind, because it’s an on-the-go-can-hold-it-while-I-am-rambunctious kind of waffle.. LOL) They taste just like a normal waffle but fill my children’s tummies with the good, wholesome ingredients they deserve.

Their theme for the event was Waffle Ice Cream Sandwiches. They had a whole bar set up ready with all their new waffle types, different ice cream options and toppings. It was so delicious and brilliant – Decided I am going to do this for Hudson’s birthday party in November at the Colorado Railroad Museum! It’s going to be SO fun, so you’ll be seeing more of these kinds of photos soon 😉

Birch Benders is such an amazing company – Not just because of their delicious products but because of their passion behind it. We’ve been their fans for 2 years now but this event has only exacerbated this.. We’ll forever be Birch Benderites and we’re so proud they’re in our gorgeous state!

Whole Foods

Eating whole foods is not as boring as some people may believe it is.. It’s a sore spot lately because I’ve heard so many people say they couldn’t possibly eat nothing but fruits, meats and veggies everyday..

Well, these are just a few snippets of things I wanna show y’all to prove it can be easy, cheap, quick and delicious to treat your body to wholesome real food!

Smoothie Bowl :: 3 minutes TOPS! Banana base (Just add a little water) then top with whatever! DELICIOUS – NUTRITIOUS – CHEAP – ANY.MEAL

So that’s a good start for meals but when asked how I snack? So many different ways, frozen fruits (Yummm..), nuts, sweet potato chips, etc.. But right now my current favorite is Kale Chips!

You can easily bake these on a low temp til crispy but we’ve got a lovely dehydrator that I throw them into after oiling and salting for 5 hours at 113*F. SUPER CHEAP – SUPER DELICIOUS – YUM.

Crazy, right? It’s not everyone’s cup of tea but my Husband and Father in Law who don’t like them usually LOVED mine! Seriously ridiculously cheap and tasty.

Everyone loves salads, right? There are even paleo dressings – And they’re really good! Simple salads are a staple.. They’re super easy and you can throw any type of protein on.. Duh… But this is just to show you you can still enjoy a delicious salad without the guilt of crummy-ingredient dressings!

Yummm.. The ranch is my favorite, SO GOOD.

Lastly, I am frugal-finatic – Got this salmon on sale at King Soopers (Kroger) and Hass Avocados and Purple Cauliflower on sale at Sprouts! It was delicious and added variety instead of chicken or beef which we use a ton 😉

Variety, Variety, Variety – You WILL burn out if you eat a ton of the same stuff over and over. Just find stuff with good ingredients that’ll satisfy whichever craving you’re currently having and your body will thank and reward you.

Smoothie Bowls

I am constantly asked how I make smoothie bowls.. They’re easy, quick, simple and can be pretty, but it also took me awhile to figure out how people were making these beautiful creations at first. I like having the smoothie consistency along with chunks of fruits/veggies/nuts which is different from what you’d get in a standard smoothie obviously.. So it’s nice to change it up if you have a smoothie for breakfast everyday.

I like putting Purely Inspired protein powder or meal replacement in my smoothie mixture because it gives me the energy boost I need in a meal!

The smoothie bowl base is made with whichever fruit you want to use but with less water/milk you’d use in a standard smoothie so that it’s a little more thick/chunky. Then top with whatever you want! Super simple right?!

My favorite is a base of 3 super ripe bananas and meal replacement powder with almond milk! I like mine thick so my fruits can sit on top without sinking in 😉 These are by far my favorite breakfasts.. Try one for yourself and let me know if you do a delicious mixture I need to know about ❥

Magical Ginger Tea

There’s a rough cold that’s tearing through our house right now that’s affecting my step-daughter and I a ton. And one savior for our rough sore throats is my Ginger Tea.

I’ve made this stuff for years but until I had children I never realized how quickly it works! I know there’s a ton of people out there with a distaste for ginger like my Husband but this stuff is actually really GOOD and works like a CHARM!

Magical Ginger Tea

1. I use about 1 smallish ginger root per cup of tea. Grate until finely minced (I like mine STRONG so it clears the sore throat and upset tummy! You can switch to 1/2 root per cup if you’d like 🙂 )

2. I usually use the mug I’m using to measure out the amount of water I need and then pour it into a mini-pot.

3. Get the water boiling and throw in the ginger root. Allow the ginger root to steep for around 4-5 minutes. Then strain into mug (The finer the better so you don’t get chunks of ginger in there.. Even though I like mine like that 😉 )

4. Add honey, a little lemon slice (Optional 😉 ) and stir – Drink as soon as temp is tolerable. The warmer the tea the better it feels on your throat!

5. Enjoy!! It’s delicious, good for you AND helpful for some of those pesky cold symptoms.
