Just BE Kitchen

My Father was in town for a week recently and we had such an amazing time. My Dad is an old fashioned cowboy from Texas. He’s ALWAYS loved Colorado and was excited to venture out with me to all it had to offer.

Again, my Dad is old fashioned so he LOVES meat, potatoes, and all of the manly foods that come to mind.. hahaha! So when I told him I had a paleo restaurant called Just BE Kitchen I’ve been dying to go to he was a bit hesitant..

We headed downtown on a gorgeous afternoon and met one of my lovely blogger friends Jennifer to grab some paleo eats. Upon entering we were so pleasantly greeted with their incredibly warm and inviting atmosphere. The restaurant is filled with lovely quotes on the wall, vintage furnitures and calming colors that remind you of early Spring.

All of this is then backed up by the warm greetings of the employees and the amazing owner Jennifer – They were all SO sweet and SO knowledgable in all of the different food sensitivities and paleo (Of course).

I felt like a kid in a candy store.. I had SO many options and nothing to hold me back from choosing WHATEVER I wanted because it was ALL paleo!

My Dad wasn’t so sure about the options because he’d never encountered it before but found a great sounding breakfast called the SIMPLICITY which was just a basic yet delicious sausage, egg, paleo biscuit and sweet potato hash meal. He LOVED it.

They also had a wonderful kids menu, where we got Hudson a chicken tender and carrots meal and I’ve literally NEVER seen him eat as much food at a restaurant than he did here. It was delicious (Yes, I even had to try a nibble 😉 ) and he nearly finished it all!

As for me.. Being paleo it’s really difficult to get a good burger because you obviously can’t have a regular bun! So when I saw they had a Bacon Cheeseburger on a PALEO bun I was ecstatic.. I had to try it. And I am not kidding when I say.. It is THE best paleo meal I’ve ever had!! The bun was PERFECT. Not the normal dryish bread you sometimes get when using paleo ingredients.. It was PERFECT. SO PERFECT, I had to order another to bring home to my Husband because he wouldn’t have believed me otherwise haha!

The owner Jennifer was so wonderful she brought out a few things for us to try such as the chia pudding (I’ve ALWAYS wanted to try it) and it was SOOO good.. Hudson DEVOURED it!! I’ll definitely have to make that sometime.. Maybe today?? And their FULFILLED Burrito which is a huge seller for them. My Husband and I make paleo tortillas all the time but this was the most normal tasting and looking tortilla I’ve ever seen made paleo. It was DIVINE. Their green chili made that meal POP even more. I’m definitely getting that next time!

I’ve eaten at paleo restaurants before but never have I quite experienced a place like this. They did things so very differently and that absolutely makes them stand out – Such as the use of MCT oil in many of their items which are medium chain triglycerides that are saturated fatty acids that hold a TON of health benefits. I’ve never seen another restaurant use these!

I could go on and on about our experience here. My Dad enjoyed it, my Son loved it and I’m a customer for life now. I highly recommend this place to anyone in the Denver area – I promise you wont be disappointed! ❥

Ba-Nom-a-Nom Nice Cream Truck

Anyone else LOVE Nice Cream?! A guilt-free and delicious alternative to Ice Cream – I love it and it’s PALEO. When I was driving back from the store last month I was behind the Ba-Nom-a-Nom truck and was INSTANTLY intrigued when the back said NICE CREAM.

That’s not something you expect to see very often with all of the unhealthy food still going around BUT in our gorgeous state of Colorado we’re doing a really wonderful job of finding healthier alternatives for ourselves and our children!

I went to their website and found their schedule. You can catch them in Denver at the Civic Center Park most Thursdays and Pearl Street Farmer’s Market in Denver nearly every Sunday! If you’re outside of the metro area you can find them up in Fort Collins on Tuesdays and Longmont on Mondays! They’re then in random locations all throughout the week! Their wide spread stops makes it really convenient for anyone to catch them!

So we picked a time and place that worked for my family and brought them to try some! I got an amazing Peach Mango flavored nice cream with vegan organic chocolate sauce and almond granola – It was DIVINE. I’m salivating just thinking about it..

And my Dad was in town from Texas (He’s an old cowboy kinda guy, I love him ❥) and wasn’t sure what he would think but after he saw the options he decided to get a strawberry and banana flavored nice cream with vegan organic chocolate sauce and he LOVED it. Said he couldn’t tell a difference!! (That was my win for the day 😉 )

The owner is an amazing woman named Sarah who wanted to bring a healthy alternative to the people of Denver and it’s making a huge difference. Kids get excited about all of the different flavors and toppings and you as a parent can feel great about the food you’re allowing them to eat because it’s beneficial for them but also GOOD which is a WONDERFUL lesson to teach your kids – Healthy. Can. Be. YUMMY!
